Apple and Honey Cereal Bar

WHAT YOU NEED:

  • 4 tbsp butter
  • 1/2 cup brown sugar
  • 1/2 cup liquid honey
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 2 cups toasted oat O’s
  • 1 1/2 cups fibre bud cereal
  • 1 cup flaked quinoa
  • 1 cup finely chopped dried apples
  • Zest of 1 lemon

WHAT YOU DO:

  1. Add the butter, brown sugar, honey and spices into a small pot and bring to a boil. Turn down the heat and simmer mixture for 1min.
  2. In a large mixing bowl add all the cereal, chopped apple and lemon zest and mix.
  3. Pour the warm sugar and honey mixture over the cereal and mix well so the cereal and dried apples are well coated.
  4. Press mixture into a greased 8×11.5 Pyrex dish.
  5. Allow to the cereal bars to firm up in the fridge for 1 hour.
  6. Cut into bars and serve.
