Chef Ricardo is a pretty big deal. His name has become a household one across Canada. He’s a chef, TV personality and bestselling cookbook author. Seriously—he just launched his seventh(!) cookbook. It’s called Vegetables First, but it’s not a book for vegetarians.

We all know that vegetables are a must in our daily diet, and that’s what Chef Ricardo’s book is all about. You’ll find meat and seafood in the pages, as well as recipes calling for chicken stock or bacon garnish, but for once, animal proteins are really just the supporting players.

Chef Ricardo dropped by The Social to highlight some of the recipes from Vegetables First. You can find them by clicking on the photos below.

Beet cocktail

Pistachio dukka

Green pea crepes and warm green vegetable salad

Rapini polpettes with tomato sauce

Chicken free pot pie

Carrot and cashew dip
