How to use up whatever's at the bottom of that almost-empty jar

Most of us, when we get to the bottom of that peanut butter jar, would throw it away, but food expert Andrea Buckett has some ways to give our leftovers a whole new life. She broke down a few ways to create whole new dishes from whatever's at the bottom of that almost-empty jar. Save what you'd normally toss and you can make those groceries stretch even further, preventing an unneeded trip to the grocery store!Find her ideas below, click on the images for the recipes, and watch the video above for more!

LEFTOVER BRINE IDEAS

A dirty martini for two

Combine 148 milliliters (5 ounces) gin, 44 milliliters (1.5 ounce) dry Vermouth, and 30 milliliters (1 ounce) olive brine.

Caesar or bloody Mary

Add 30-60 millilitres (1-2 ounces) of brine (any brine will work) per drink.

Pickle back shot

30 millilitres (1 ounce) shot of whisky followed by a 30 millilitre (1 ounce) pickle brine chaser.

Marinade/Salad dressing

Swap out some or all of the vinegar or citrus juice in any salad dressing or marinade for pickle, olive or hot pepper brine. Omit the salt from the recipe because brine has added sodium.

Quick pickle

Prep vegetables that you have on hand (cucumber rounds, blanched carrot sticks, cauliflower florets or green beans or hard cooked eggs) add them to a bottle of pickle brine and set them in the fridge for three days. To blanch: bring a pot of water to the boil and add the vegetable of choice, cook for 2min.  Drain and rinse in ice cold water.

LEFTOVER PEANUT BUTTER/NUT BUTTER IDEAS

Overnight oats

This works best with small jars but you could make a family batch in a larger container as well. Basic overnight oat ratio: one cup old fashioned oats, one cup milk, 1/2 cup yogurt, one teaspoon cinnamon and one to two tablespoons sweetener (honey, brown sugar, maple syrup). Add ins: 1/2 cup fresh or frozen berries, toasted nuts, chia, hemp or flax seeds.

Savoury peanut sauce

Sweet roasted peanut and honey sauce

1/2 cup peanut butter, 1/2 cup hot milk, two tablespoons brown sugar, two tablespoons honey (optional: handful of chopped roasted peanuts). Shake up everything right in the jar. Let cool and store in the fridge. Serve over ice-cream, pancakes, oatmeal etc.

LEFTOVER JAM AND JELLY IDEAS

Fruity whipped cream

1/2 cup cold cream (35%) and bottom of the jar jam (one to three tablespoons). Add the whipping cream to the jar, seal and shake until thick. Serve over pancakes, waffles, pound cake or fruit.
