It's Father's Day weekend and it's the perfect time to treat that special someone in your life with something special. For many dads, that "something special" often involves food. 

Food expert Jason Skrobar dropped by the Your Morning kitchen to show us a twist on traditional breakfast items that, let's be honest, you can make any time of the year.

Maple Pulled Pork and Cornbread Waffle Breakfast Nachos

WHAT YOU NEED:

For the Pulled Pork
  • 4-6 lb. boneless pork shoulder
  • 2 tsp salt
  • 1 tsp ground black pepper
  • 2 tsp smoked paprika
  • 1 tsp cumin
  • 1 onion, sliced
  • 1/3 cup apple cider vinegar
  • 1/2 cup pure maple syrup
  • 2 Tbsp Worcestershire sauce
  • 1/4 cup tomato paste
  • 1/2 tsp dry mustard Trim pork of any excess fat and skin.

WHAT YOU DO:

  1. In a bowl combine salt, pepper, smoked paprika and cumin and rub spice mixture all over the pork. Layer the bottom of a roasting pan with sliced onions and place pork over top, cover and refrigerate for at least 1 hour or overnight.
  2. Pre-heat oven to 450°.
  3. Roast the seasoned pork shoulder for 1 hour. While pork is beginning to roast, mix together apple cider vinegar, maple syrup, Worcestershire sauce, tomato paste and dry mustard. Once the pork has roasted for one hour at 450°, remove it from the oven and pour the sauce all over the pork. Reduce the oven temperature to 325°, cover the pork and return it to the oven to roast for an additional 2 - 2.5 hours. Once pork is roasted it should fall apart easily with a fork.
For the Cornbread Waffles

WHAT YOU NEED:

  • 1.5 cups cornmeal
  • 1 cup all-purpose flour
  • 1 TBSP baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 TBSP brown sugar
  • 4 TBSP melted unsalted butter
  • 1.5 cups buttermilk
  • 1 egg

WHAT YOU DO:

  1. Pre-heat waffle maker and spray with non-stick cooking spray.
  2. In a bowl mix cornmeal, flour, baking powder, baking soda and salt. In another bowl combine brown sugar, melted butter, buttermilk and egg and whisk to combine. Pour wet ingredients into dry and mix until nicely combined. Let batter rest for about 15 minutes. Using a 1/4 measuring cup pour batter into pre heated waffle maker - you’re looking for smaller waffles, the size of hockey pucks.
For the Sour Cream Bourbon

WHAT YOU NEED:

  • 1 cup full fat sour cream
  • 1/4 cup bourbon
  • 2 TBSP maple syrup
  • 1 TBSP Dijon Pinch of salt and pepper

WHAT YOU DO:

  1. Add all ingredients to a bowl and mix well to combine.
For the Nachos

WHAT YOU NEED:

  • 4 cups Maple pulled pork 8 mini cornbread waffles
  • 1 cup shredded mozzarella
  • Sour cream bourbon sauce
  • 3 green onions, sliced
  • 6-8 fried eggs *optional

WHAT YOU DO:

  1. Pre-heat oven to 350°.
  2. Line a baking sheet with foil and place cornbread waffles to cover the bottom of the baking sheet. Spoon 1/2 cup pulled pork over each waffle, spreading the pulled pork to make sure each waffle is covered. Sprinkle mozzarella evenly over the pork. Place in the oven for 15 mins, or until pork has warmed through and mozzarella is bubbly and melted. Remove from oven, place fried eggs evenly over the nachos, drizzle with sour cream bourbon sauce and sprinkle with green onions.

Palačinke

WHAT YOU NEED:

  • 2 cups flour
  • 2 TBSP sugar
  • 2 room temperature eggs, separated
  • 3 TBSP butter, melted and slightly cooled
  • 1 3/4 cups room temperature milk

WHAT YOU DO:

  1. Heat a non-stick skillet over medium heat.
  2. Mix flour and sugar in a bowl and make a well in the middle. In another bowl whisk egg yolks, milk and melted sugar until combined. Pour this wet mixture into the well and mix into a smooth batter. In another bowl beat egg whites until they form a stiff peak, and fold into batter. Melt butter in hot skillet and using a 1/4 cup measuring cup ladle batter into pan. Once you see bubbles starting to form around the edges it’s time to flip! Enjoy these crepe like pancakes with your favourite toppings.

Serve with your favourite toppings, like: Chocolate sauce, caramel sauce, whipped cream, sliced fruit, candied nuts, pretzels, sprinkles, chocolate chips or any other sweet thing your heart desires!
