Everything Breakfast Cookies

Make a big batch of these ‘everything breakfast cookies’ to have ready for the morning. They taste like muffin tops and are filled with both dried and fresh fruit, plus veggies. Gift them to friends over the holidays so they don’t have to think about making breakfast in the morning.

Prep Time: 10 minutes
Total Time: 25 minutes, plus cooling time
Makes: 12-13 cookies

WHAT YOU NEED:

  • 1 ½ cups large flake oats
  • ½ cup all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup dried cranberries
  • ½ cup pumpkin seeds
  • ¼ cup unsalted butter, at room temperature
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 ripe banana, mashed
  • ½ cup shredded carrot
  • ½ cup chocolate chips (optional)

WHAT YOU DO:

  1. Preheat oven to 350F. Line two baking sheets with parchment paper.
  2. In a large bowl combine oats, flour, baking powder, salt, cranberries and pumpkin seeds. In the bowl of a stand mixer or using hand beaters, beat butter with sugar until light and fluffy, about 1 minute. Beat in egg. Scrape down sides of bowl as needed. Beat in mashed banana and carrots. Beat dry ingredients with wet ingredients and mix until just combined. Mix in chocolate chips, if using.
  3. Place ¼ cup spoonfuls of batter onto prepared baking sheets. Press cookies flat with your hand. Bake in the oven for 12-15 minutes, until golden brown. Let cookies cool 5 minutes on baking sheets. Transfer cookies to a wire rack to cool completely.
