When you think of wintertime, you probably think of hearty stews, pasta, and meaty entrees. Celebrity chef Kevin Dundon wants to switch things up a bit, and brought us two modern Irish winter recipes that will hit the spot on the coldest day. One of Ireland’s best-loved chefs, Kevin can usually be found busy at work in the Dunbrody House kitchens and cookery school. You will also often find him gracing the TV screens and chatting on Irish radio covering all things to do with food.From a traditional bacon and champ mash to an absolutely heavenly trifle, these  recipes are pretty much guaranteed to brighten your day with ease.
