Most of us have this message drilled into us as children: EAT. YOUR. VEGETABLES. It can turn into a bit of a task—not something you enjoy, but something you’re supposed to do. Well, Chef Ricardo has a few tricks up his sleeve to put the joy back into eating your greens with a few recipes that put veggies front and centre.

The recipes can be found in his brand new cookbook, Vegetables First. Let’s get one thing straight: this is not a vegetarian cookbook. It’s a book about putting vegetables in the lead role, but still features meat and seafood.
