These are really good for cooking, but might be a little too firm and tart. You’ll often need a good amount of sugar.
Galas taste the most like apple juice. When you think of apple flavour, you think Gala! They are great with pork because their subtle sweetness just pairs so well with pork and mustard, etc…Also, Galas hold their shape well and are perfect for holding up to the high heat in the oven.
Red Prince or Mac apples are such a great colour, they cook down nicely and get a little jammy and juicy. They are great out of hand or cooked and are really great for any use other than really long cooking uses.
