Who doesn’t love a good old fashioned grilled cheese sandwich? They’re the simplest things to make (pan + bread + butter + cheese = done), yet also some of the best comfort food around. It’s no wonder people celebrate National Grilled Cheese Day on April 12.

The Ritz-Carleton is getting into the spirit as well with five new offerings at its TOCA restaurant, including the lavish signature TOCA Sandwich, which costs a whopping $45. For fresh Canadian lobster, house-made sourdough, organic prosciutto, arugula salad with truffle moliterno and Le 1608 cheese from Quebec’s Charlevoix region, we’d say 45 bucks is a bargain. Or, if you wanted to try it yourself at home, we snagged the recipe, below.

In the meantime, you could just get creative in your own kitchens, and attempt any one of these delicious, warm-you-up, ooey, gooey grilled cheese sandwiches that are so wrong they’re right.

Probably best not to click on an empty tummy.

The TOCA Sandwich

Ingredients:

  • 1 Canadian lobster tail
  • 2 slices organic prosciutto
  • 60 grams 1608 cheese
  • 2 slices sourdough bread
  • 25 grams arugula
  • 15 grams pickled red onion
  • 10 grams grated truffle moliterno cheese
  • Oil olive, salt & pepper to taste

Directions:

  1. Toast the sourdough bread
  2. Make an arugula salad with the pickled onion and grated moliterno
  3. Spread the salad on 1 piece of toasted sourdough
  4. Add the 2 slices of prosciutto on top of the salad
  5. Melt the 1608 cheese on top of the other piece of sourdough and add to the top
  6. of the sandwich with the cheese side up
  7. Flash cook the poached lobster in the oven for 2 minutes to warm it & lay on top of the sandwich
